Gentle strongman

The ThermoMax thermooil rack oven delivers a combination of gentle radiant heat and thermooil power that allows you to playfully bake three full racks of rye bread. The robust design ensures minimal heat loss, and the eight-chamber igniter bakes rack after rack. Suitable for baking both mould breads and wheat buns, which remain moist for hours after baking.

HEAT STAYS WHERE IT SHOULD

During baking, we preheat the air drawn in, which results in minimal cooling of the baking chamber, so the oven does not need to be heated unnecessarily and your energy bill will be happier. Minimal temperature changes in the chamber bring about the perfect baking so desired for bread products.

Installing the turbo system (optional) adds convection, i.e. air flow, to the gentle radiant heat of the thermooil, which makes the products crispier and acquire a beautiful color. The efficiency of the turbo system can be easily adjusted on the oven control panel in 8 different levels.

By using the waste heat from the deck ovens through the EkoBlok, you can reuse up to 20% of the input energy depending on the baking capacity. We have recently installed a ThermoMax thermooil rack oven with a capacity of 2600 pcs/hour of approximately 45 g of pastries. The basic version of the oven has universal use for baking light-weight pastries, such as rolls, buns and baguettes, including small and delicate pastries.

Results
by the numbers

Thermooil serves as a heat transfer medium for transferring energy between the boiler and the baking oven. Its properties ensure efficient transfer of thermo energy and at the same time serve as a good heat accumulator. Thermooil with a temperature of approximately 300 °C flows in the heating radiators, similar to hot water heating, and ensures maximum baking temperature. Since the difference between the thermooil and the temperature in the baking chamber is minimal, baking takes place with gentle radiant heat - similar to steam ovens.

The ThermoMax thermooil rack oven features a 10" color touch screen that allows easy setting of recipes and temperature curves and fast and intuitive control. The oven can also be connected to other Android and iOS devices, making it possible to monitor production at the bakery from anywhere. The software communicates clearly and respects the work of bakers, resulting in a faster process and shorter training time for bakers.

Gentle radiant heat ensures maximum temperature stability and high baking performance in a small area. The ThermoMax thermooil trolley oven guarantees uniform baking and soft pastries even after several hours of baking.
