The bakery heaven's permanent star in Turkey

The ThermoStar thermo-oil oven is a permanent fixture in bakery heaven among bakers not only in the Czech Republic but also abroad. It is not for nothing that it bears the characteristic „star“ in its name, which means „star“. Its popularity is also evidenced by the fact that it has successfully taken off in Turkey.

The cornerstone of our product portfolio - the ThermoStar thermo-oil oven and other new models in multi-deck design were introduced to the baking public last year. Stages placed one above the other in the oven allow full use of the bakery space and, of course, more efficient production of bakery products. One of the large bakeries that requires highly efficient production in the smallest possible space is EKMEK 2000 from Istanbul.

The new EKMEK bakery is one of the largest bakeries there, as it produces about 140,000 pieces of 300 g wheat bread per day. In order to enable the bakery to maximise production efficiency, we recommended a semi-automatic line operation with the products rising in trolleys and manually transferring trays of risen dough to the serving table. Once the line is set up, it runs fully automatically.

The bakery currently operates on the basis of six eight-setting ThermoStar thermo-oil ovens, which are operated by three of the most powerful models of Asistent Line planters. Program control of the baking process is provided by the MultiControl automatic control system, which is the subject of the second issue of KORNFEIL IDEA magazine. Thanks to the installation of an automatic bread line, the bakery has reached an hourly production capacity of 13,000 pieces. The EcoBlock, which processes the waste energy from the bakery ovens and thus significantly reduces energy consumption, is also an unforgettable part of such a complex technological unit.

"I would never have believed that the space of a bakery could be used so efficiently. Our bakery is 300 m² and the ovens make up 210 m² of the baking area," says the manager of the Istanbul bakery.

ThermoStar ovens are always designed based on specific customer requirements. The number of stages is selectable from 4 to 12 stages as well as the number of circuits from single, double to triple circuit oven designs. It is the unlimited variability of the ThermoStar stage ovens that makes it possible to bake different types of bread or other baked goods in each stage.
