
In 2018, we installed a new automatic bread production line at Pecud. We are proud that a few months after the line was put into operation, the PECUD bakery won the prestigious Bread of the Year award for bread baked in the new ThermoStar TopCrust thermal oil deck oven.
The basic product range at the PECUD bakery is bread, with more than 100 types baked daily. The production program also includes regular and fine pastries, which is why they decided to contact us again.

We have recently installed a ThermoMax thermo-oil trolley oven with a capacity of 2,600 pieces/hour of approximately 45 g of baked goods. The basic design of the oven is universal for baking small-weight baked goods such as rolls, buns, and baguettes, including small and delicate baked goods.

Thermal oil serves as a heat transfer medium between the boiler and the baking oven. Its properties ensure efficient heat transfer and it also serves as a good heat accumulator. Thermo oil at a temperature of approx. 300 °C flows through heating radiators similar to hot water heating and ensures maximum baking temperature. Because the difference between the thermo oil and the temperature in the baking chamber is minimal, baking takes place with gentle radiant heat – similar to steam ovens.
The ThermoMax thermal oil rack oven includes a 10" color touchscreen display that allows for easy recipe and temperature curve settings and quick and intuitive operation. The oven can also be connected to other Android and iOS devices, making it possible to monitor production at the bakery from anywhere. The software communicates clearly and respects the work of bakers, resulting in faster processes and shorter training times for bakers. Gentle radiant heat ensures maximum temperature stability and high baking performance in a small area. The ThermoMax thermo-oil trolley oven guarantees even baking and soft baked goods even several hours after baking.
