Project Request

The objective was to build a new bread line with high capacity, production flexibility and the ability to efficiently use the existing bakery space.

Realized solution

ThermoStar oil-fired batch furnace

For space reasons, a 15-stage ThermoStar thermo-oil furnace with a baking area of 72 m² was designed. The oven is equipped with TopCrust technology in a five-circuit design, allowing different types of bread to be baked as if in five separate ovens on top of each other.

  • The range includes breads from 400 g to 1 100 g.
  • TopCrust technology enables controlled steam extraction, allowing bread to bake evenly and reducing baking time by up to 15%.

Continuous proofing

The line starts with a fully automatic continuous proofing machine equipped with two types of pedigree loafers (for 400-600 g and 600-1,100 g breads). The dough tipping is program-controlled, including the angle and speed of the hinge rotation, which minimizes deformations and simulates the manual work of the baker.
The feeding table is equipped with pneumatic lifting for gentle dough tipping, which allows the use of the proofing machine even for looser types of dough.

Automation and MultiControl

The entire process - from proofing, to rising, to baking, to handling the finished products - is controlled by a single MultiControl software. This connects all the elements of the line and allows recipes to be stored. The operator simply selects the desired product on the control panel, reducing the risk of errors.

The kiln is equipped with an identification system using chips in the hinges that display the current filling status. The assortment can be changed with a minimum production quantity of 120-160 pieces of bread.

Assistant Line and additional equipment

The line also includes an Assistant Line planter, as well as feeding tables, slicing, seeding and moistening equipment before and after baking.

Nová linka umožňuje:

  • výkon 800–1 000 chlebů za hodinu,
  • flexibilní výrobu menších i větších šarží,
  • rozšíření sortimentu od klasických pšenično-žitných až po 100% žitné chleby,
  • stabilní kvalitu a úsporu energie díky termoolejové technologii.

Hotové výrobky jsou po upečení automaticky spočítány, dopraveny do chladicího úseku a následně předány do expedice.
