
In the spring of 2010, Lanškroun Bakery installed a nine-position ThermoLine pass-through thermo-oil oven, which can bake a wide range of breads as well as common white pastries baked directly on baking plates. Two machines are used to operate the oven - a planter and a dispenser (AsistentLine). Thanks to the versatile use of the oven, Lanškroun is able to bake continuously throughout the day and night, while rotating a wide range of bakery products.
"The work for the bakers and for us, the company management, has been made much easier by the introduction of the program control of the baking process, thanks to which we have a constant overview of the production structure on all ovens and kilns. The MultiControl control system has partially taken over our responsibility, thus reducing the possibility of human error, which is common in the Czech bakery environment due to the lack of qualified staff," adds the bakery owner. An important factor in the installation of this high-performance pass-through oven was also the 25% reduction in energy consumption compared to using a band oven. The use of waste energy from the ovens, which is processed using EkoBlocks, also contributed significantly to the reduction in energy consumption. "We use the recovered energy for heating hot water, heating and cooling the entire building," explains Jiří Kolert, one of the bakery's owners.
