Crafting Sourdough with Cyclothermic Baking

1 minute reading

Founded in 2012 by Brenton Lang, Rustica has become one of South Yarra’s key destinations for artisan bakery products and café dining. With growing demand and new locations, Rustica decided to reorganize and partly relocate its production. Pastry products are baked directly at individual sites, while bread production takes place in a high-capacity bakery operation in Footscray. Every product, from croissants to their signature cruller, is made using traditional methods and high-quality ingredients.

RESULTS

The entire bread baking process is controlled by one integrated MultiControl system. Operators work with preset recipes and control production by simply selecting the required product. This reduces operator error, increases efficiency, and ensures consistent baking results.

Although the solution consists of only two ovens, it is designed as a complete line, integrating loading, product preparation, and product handling equipment into one synchronized system. The purpose is to maximize efficiency and reduce operating costs.
