FAST AND GENTLE PLACING OF FREE-RISE DOUGH
The dough is gently handled using rolling cloths, allowing free-rise dough products to be quickly placed into deck ovens.
The dough is manually placed on special trolleys with a textile surface, on which it rises in a box proofer. After rising, the trolley is inserted into the Akrobat & FixBox transfer station, which takes over all further work and gently places the dough into the oven. The Akrobat & FixBox station is suitable for free-risen breads from 300g to 2500g, wheat breads, cereal and rustic breads, ciabattas, Arabic breads, and small-weight baked goods from 100g.
