Merhaut's Bakery operates 18 stores in Prague, the Hradec Králové Region, and the Central Bohemian Region, baking thousands of loaves of fresh bread and an excellent range of bakery products every day.

THE GOAL

 The aim of the project was to modernize bread production, speed up the baking process, ensure consistent product quality, and preserve the character of artisanal baking.

Solution

A semi-automatic bread line was installed, consisting of:

The main role in process control is played by the MultiControl control system, which ensures full control over baking and is operated via a touch panel directly at the feeding table.

Kornfeil box proofers were installed for dough fermentation. After proofing, the dough pieces are automatically transferred to the feeding table and placed in the individual oven decks using the Com Assistant. After baking, the products are automatically transported to the dispatch area.

ThermoMax thermo-oil trolley ovens were supplied for the production of white and sweet baked goods. Their uniform radiant heat ensures that the baked goods remain soft even several hours after baking.

Result

The new technological solution made it possible to:

  • increase the efficiency of bread production,
  • speed up and automate loading,
  • maintain the consistently high quality of bread, white and sweet baked goods,
  • ensure the softness of baked goods thanks to thermo-oil trolley ovens,
  • simplify production control through the MultiControl system.
